Hamburger Pie

The heat wave has officially hit here in our neck of the woods and it is ghastly!  This past week my husband and daughter requested a few of their favorite meals and most all of them required baking in the hot oven. What’s a momma to do?  Why, make dinner in the morning before it gets too hot!  I thought I’d share Friday’s feast with you all, “Hamburger Pie.”  It’s been a family favorite for years now.  You can tweak it to your liking, too. 

Hamburger Pie

Ingredients

2 deep dish pie shells, baked to package directions

1 1/2 lbs. ground beef

1 medium onion, diced

8 oz. tomato sauce

2 cans green beans, drained (this last time I made this, I used one jar of green beans my aunt canned. It was the equivalent of two cans from the grocery store.)

1/2 cup of fresh mushrooms, sliced (optional)  The hubby and daughter despise them, so I omit them. Sigh…

1 1/2 teaspoon Cumin

Salt and pepper, to taste

1 1/2 cups of shredded cheese of your choice (I use extra sharp cheddar)

Directions

After preparing pie crusts, preheat oven to 350°.  Season ground beef with salt and pepper and brown the beef with onions. Drain off any fat. 

  

Add green beans and tomato sauce to beef. Add cumin and then divide mixture between both pie shells.  

   
   

Place on baking sheet and bake for 15 minutes. Add shredded cheese and return to oven for about 5-10, or until cheese is completely melted.  

  
Since this makes two pies, and there are only three of us, I placed the second pie in a large freezer bag, date it and put in my freezer for a future meal. I do not add cheese to the second one until I’m ready to bake it.

Of Cold Weather, Colds and Yummy Recipes

Day two of sleet and snow covered ground and roads and Morgan’s sniffles are still looming large. To open up her sinuses, she asked for something spicy last night for dinner. I had made The Pioneer Woman’s Veggie Chili Sunday night and had plenty of it left over.

However, she wanted more than the chili, so the hubs suggested chili-cheese hot dogs. I do believe the Pioneer Woman herself would approve this! It was delicious! Of course, we need a little sweet to go after our spice and this frappuccino recipe fit the bill.

Unfortunately we are under yet another winter weather advisory this evening until the wee hours of tomorrow morning. I’m hoping Morgan is feeling much better tomorrow and I hope I don’t get it! She’s the second one to succumb to the cold. Tommy was the first, and he has had sinus crud going on for over a week now.

I won’t get sick. I can’t get sick. This wife and mom doesn’t take sick days for fear of what the house will look like while in bed. 😝
